Fusilli with Ham and Peas

I know easter was almost two weeks ago now, but I had some frozen ham in the freezer that I still needed to use. I wasn't in the mood for split pea soup so this is what I found online and it was so good!

Ingredients:

1 teaspoon olive oil
1 onion -- chopped
1 clove garlic -- chopped
1 cup slivered ham
1 cup chopped tomato
1/2 cup chicken stock
1/4 cup light cream cheese
1 cup frozen peas
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 pinch pepper
3 cups fusilli pasta -- (I used whole grain spirals and they were fabulous)
2 tablespoons freshly grated
Parmesan cheese

Directions:

In large nonstick skillet, heat oil over medium heat; cook onion and garlic, stirring occasionally, for about 5 minutes or until softened. Add ham, tomato and stock; gradually blend in cream cheese, stirring until melted.

Add peas, basil, oregano and pepper; reduce heat and simmer for 5 minutes. Meanwhile, in large pot of boiling salted water, cook pasta for about 8 minutes or until tender but firm.

Drain pasta well and add to skillet; toss to coat well. Serve sprinkled with cheese.

I made this for dinner tonight and Steve and I both enjoyed it. I am excited to have a good recipe to use left over ham up with. This is definitely a keeper in my book!
