This may not sound appetizing, but it really is a yummy soup and great for this time of year. I served it with some crusty bread and a side salad.
2 lbs. lean ground turkey
1 onion, chopped
46 oz. tomato juice
2 C. water
2 cans Cream of Celery soup
2 lbs. carrots, grated (I think you could use the shredded carrots in a bag and it would work fine)
Salt and pepper to taste
Dash of garlic powder
Cook your ground turkey and onions together. Add all ingredients together to simmer on the stove or in a crock pot (on high) for a couple of hours until carrots are cooked through.
Hope you like it! :)
